We left the coast to understand what Origen looks like somewhere completely different. In the desert, we found the same thing we’ve always believed—food, nature, and experience are never separate.

Before Origen opened, Manu and Pollo spent a few days in La Ventana. Time on the water, early mornings on the boat, and long hours in the sea. During one dive they found themselves swimming alongside a group of orcas hunting a seven gill shark, a rare sight in these waters and one of the many moments from the trip that helped shape the spirit behind Origen.
